Warm Pasta and Crab Salad

Growing up we never ate much seafood at home, but in the year before I went to university the family went to Mexico and it was there that I got a real education in a type of food I had never tried before. On that trip, I was introduced to a lot of seafood, but this seafood pasta recipe was one that i asked for from one of the chefs. It is a simple pasta salad that uses delicate flavourings to enhance the taste of the crab. This is the perfect dish to enjoy if you want a fancier dish at home or something to impress dinner guests.

Warm Pasta and Crab Salad

ingridients

  • 250g spaghetti

  • 2 Tbsp olive oil

  • 25g butter

  • 600g cooked crabmeat

  • 1 red pepper, cut into strips

  • 2 tsp grated lemon zest

  • 2 Tbsp chives, finely cut

  • 3 Tbsp parsley, chopped

  • Salt and Pepper

Method

  1. Bring a pan of salted water to a rolling boil over a medium heat

  2. Break the spaghetti in half and cook in the pan until cooked through but with some bite (around 10 minutes).

  3. Drain the pasta and move to a large bowl.

  4. Toss with the oil and butter. Add the rest of the ingredients combine well. 

  5. Serve
