A crunchy, flavourful salad with fresh vegetables and coriander, tossed in a rich peanut dressing and topped with crushed peanuts.

Thai Peanut Salad

ingridients

  • 200g shredded cabbage

  •  2 carrots, julienned

  •  2 bell peppers, thinly sliced

  •  1 bunch coriander, chopped 

  • 50g peanuts, crushed 

  • 100ml peanut dressing

Method

  1. Combine cabbage, carrots, peppers, and coriander in a bowl.

  2. Drizzle with peanut dressing. 

  3. Toss well and sprinkle with peanuts.

  4. Serve.
