Spiced Cauliflower Soup

When I first moved away for university I took a job in a small family owned cafe in Bath. They served simple and hearty food, but the highlight of their menu was always their soups. They were an absolute favourite of the customers and when winter came around this cauliflower soup would be the big seller on the menu. This is a warming a moreish soup that is the perfect way to get through a cold day. This recipe makes a lot of soup, so it is perfect if you holding a dinner party, or if you just to make up a big batch to freeze for those cold winter afternoons.
ingridients
1 large cauliflower, cut into florets
2 medium onions, peeled and roughly cut
2 large potatoes, peeled and diced
50g margarine
50g flour
2 ltr vegetable stock
2 tsp curry powder
Salt and pepper
Method
Heat a pan of salted water over a medium heat until it reaches a rolling boil
Add the potato and cauliflower to the pan and cook until tender (around 15 minutes). Remove from the pan and retain the cooking water
Melt the margarine in a pan over medium heat. Fry the onions lightly until they just begin to colour (around 5 mins), Add the flour and curry powder to the pan to make a paste
Add the cooking water to the pan to make a thick sauce.
Add the cauliflower and potatoes, and cook gently for 30 minutes.
Add the mix to a blender and blend until you have the consistency you want. Add a little cream at this stage for a more silky texture. Season to taste. Serve
