A hearty salad featuring roasted courgette, peppers, and onions, combined with fresh rocket and cherry tomatoes, dressed with balsamic vinaigrette.

Roasted Veggie Salad

ingridients

  • 1 courgette, sliced 

  • 2 bell peppers, sliced

  •  1 red onion, sliced 

  • 200g cherry tomatoes, halved 

  • 100g rocket leaves 

  • 2 tbsp olive oil 

  • 100ml balsamic vinaigrette

Method

  1. Preheat oven to 200°C 180°C fan (gas 4) 

  2. Roast courgette, bell peppers, and onion with olive oil until tender. 

  3. Combine with cherry tomatoes and rocket. 

  4. Drizzle with balsamic vinaigrette and serve.
