A hearty salad with roasted carrots and chickpeas, complemented by tahini dressing and rocket leaves.

Roasted Carrot & Chickpea Salad

ingridients

  • 400g carrots, peeled and sliced

  •  400g chickpeas, drained and rinsed

  •  2 tbsp olive oil

  •  1 tsp cumin

  •  100g rocket leaves

  •  100ml tahini dressing

Method

  1. Roast carrots and chickpeas with olive oil and cumin until tender.

  2. Combine with rocket.

  3. Drizzle with tahini dressing

  4. Serve.
