200g quinoa, cooked and cooled

 200g cherry tomatoes, halved

 1 cucumber, diced

 100g feta cheese, crumbled

 1 red onion, finely sliced

 100ml lemon-tahini dressing

Method

1. Combine quinoa, tomatoes, cucumber, feta, and red onion in a bowl.

 2. Drizzle with lemon-tahini dressing.

 3. Toss well and serve.
