This classic Italian salad features toasted bread cubes mixed with ripe tomatoes, red onions, and fresh basil, all dressed with a tangy red wine vinegar and olive oil dressing.

Panzanella Salad

ingridients

  • 1 loaf stale bread, cubed

  • 3 ripe tomatoes, chopped

  • 1 red onion, thinly sliced

  • 120 ml fresh basil, chopped

  • 60 ml red wine vinegar

  • 60 ml olive oil

  • Salt and pepper to taste

Method

  1. Toss the bread cubes with a drizzle of olive oil and bake in a preheated oven at 180°C (350°F) until golden brown.

  2. In a large bowl, combine the tomatoes, red onion, and basil.

  3. Add the toasted bread cubes and toss to combine.

  4. In a small bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.

  5. Pour the dressing over the salad and toss to coat.

  6. Tip: Add crumbled feta cheese for a salty tang.

  7. Serve.
