This classic Italian salad features toasted bread cubes mixed with ripe tomatoes, red onions, and fresh basil, all dressed with a tangy red wine vinegar and olive oil dressing.

1 loaf stale bread, cubed
3 ripe tomatoes, chopped
1 red onion, thinly sliced
120 ml fresh basil, chopped
60 ml red wine vinegar
60 ml olive oil
Salt and pepper to taste
Method
Toss the bread cubes with a drizzle of olive oil and bake in a preheated oven at 180°C (350°F) until golden brown.
In a large bowl, combine the tomatoes, red onion, and basil.
Add the toasted bread cubes and toss to combine.
In a small bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to coat.
Tip: Add crumbled feta cheese for a salty tang.
Serve.
