A Mediterranean salad with chickpeas, vegetables, olives, and feta, dressed in lemon-oregano dressing.

Mediterranean Chickpea Salad

ingridients

  • 400g chickpeas, drained and rinsed

  •  1 cucumber, diced

  •  200g cherry tomatoes, halved

  •  1 red onion, chopped 

  • 100g Kalamata olives

  •  100g feta cheese, crumbled

  •  100ml lemon-oregano dressing

Method

  1. Mix chickpeas, cucumber, tomatoes, onion, olives, and feta in a bowl. 

  2. Drizzle with lemon-oregano dressing.

  3. Toss well and serve.
