I first tried this fabulous fish dish in a small cafe on the coast owned by a lovely Danish couple. This fish in this recipe is melt in the mouth and is complimented in both texture and taste by the bacon. I prefer to use cod here, but any white-oily fish will do. I like to serve it with some boiled new potatoes and broccoli, but it's a dish that will go well with most things
ingridients
100g chopped streaky bacon
100g mushrooms
100g frozen peas
4 x 150g cod fillets
25g butter
Salt and Pepper
Method
Heat your oven to 180°c (Gas4)
Grease a shallow ovenproof dish with butter. Arrange the bacon on the bottom of the dish
Top the bacon with the mushrooms and peas
Season the cod and place on top of the bacon and vegetables
Add a knob of butter to the top of each piece of cod. Cover and bake for 20 minutes
Uncover the dish and bake for a further 10 minutes
