Chickpea & Spinach Salad

ingridients

  • 400g chickpeas, drained and rinsed 

  • 200g fresh spinach 

  • 1 red bell pepper, diced

  •  1 red onion, chopped 

  • 50g pumpkin seeds

  • 100ml lemon-tahini dressing

Method

  1. Combine chickpeas, spinach, bell pepper, and onion in a bowl.

  2.  Add pumpkin seeds. 

  3. Drizzle with lemon-tahini dressing and toss.
