Carrot and Coriander Soup

Carrot and coriander soup is one of the most popular soups in the UK. It has all the warming flavour of a chicken or cauliflower soup, but packs in more nutrients than some others. This is a great recipe for cold days or if you're feeling down.
ingridients
175g onion, diced
500g butter
500g carrot, sliced
1 garlic clove, finely chopped
2 pints vegetable stock
2 tsp caster sugar
150 ml whipping cream
2 Tbsp chopped coriander
Salt and Pepper
Method
In a saucepan, sweat the onions in the butter until soft (around 5 mins)
Add the carrots to the pan and cook, stirring lightly for around 5 minutes
Add the garlic and stock to the pan. Season with salt, pepper and sugar. Half cover the pan and boil slowly for about 30 minutes
Pour the contents of the pan into a blender and blitz to a puree. Return to the pan, heat through and add the cream and coriander.
