Asparagus and Chorizo Salad

This interesting salad recipe was the brainchild of the owner of a small cafe in Bath. I was a bit dubious about it at first, but it was one of our best selling menu items. This refreshing asparagus salad is a refreshing and delicious salad that combines some unusual flavour combinations that will blow your guests away at a dinner party or be a treat you can enjoy on your own.
ingridients
250g asparagus
2 chorizo sausages, sliced into bite-size pieces
3 Tbsp olive oil
1 Tbsp sherry vinegar
1 Tbsp wholegrain mustard
2 slices of white bread, cut into cubes
handful of rocket leaves
Method
Bring a pan of salted water to a boil. Add the asparagus and cook for about 10 minutes or until just going tender. Drain the water and leave to cool
Grill the chorizo under a hot grill until just beginning to colour (around 5 minutes) and leave to cool on a piece of kitchen paper
Combine 2 Tbsp of the olive oil with sherry vinegar and mustard. Add salt and pepper to taste
Heat the remaining oil in a pan over medium heat. Add the bread cubes and fry until golden, stirring constantly to avoid burning
Put the rocket leaves on the plate and top with the asparagus and chorizo. Add the croutons on top and drizzle with the dressing
